First off, RTFM :D
If it's like the 300D, you need to hold one of the other buttons (I think it's the one you use to zoom in on preview images) and while depressing the button, turn the dial.

that button should be labled "Av," hold that then turn the dial.

Try opening the very detailed manual that came with the camera. You will find your answer and many other answers to the proper operation of your camera in the manual.
I read the manual front to back twice, I didn't see any mention of that there, I might have missed it though.
