We vacationed in San Juan back in Jan. We stayed at the Courtyard by Marriott right next to SJU. Every room has a balcony and ours overlooks the threshold of RWY 8. Better yet, the fire escape opens to a small landing overlooking RWY 26. So while the family chilled on the beach. I stayed glued to these location. Without a doubt, AA had the most movements, but there was a good mix of other US carriers like DL, B6, CO and US. There were a lot of turbo-props of airlines serving the Carribean. There was even cargo flights by Four Star airline's DC-3. UPS and Fedex both had flights using AB3 or DC10. Martin Air has a daily MD-11 flight.
If you visit San Juan, the Courtyard hotel is a must for any spotters.
