Ah! Stuart I'm so glad you got to see that! The Pike's Place flying fish guys are world famous! I've been using segments of a training program now for years with the company's I've been with. Sadly the two times I went to the fish market to see these guys when I was in Seattle...they were closed.... :( Here's a link if you want to learn more about them.
